Making excuses about why you don't pack lunch?
Do you find yourself complaining that you just don't have enough time in the morning? Or wasting money on food you could have just as easily made at home? Or guiltily eating take garbage out when you know there are perfectly good leftovers sitting in your fridge?
This is the recipe that kicks every possible excuse to the curb. It's totally possible to make yourself a yummy lunch (or dinner!) that's good, good for you, and oh-so-simple. Best of all, it only takes 10 minutes!
Veggie Melt Wraps
Prep Time: 5 min. Cook Time: 10 min. Difficulty: Easy
Recipe adapted from MyFridgeFood
Makes 8 wraps
2 cups shredded Monterey Jack cheese
3 cups chopped vegetables, any kind you have on hand
2 tomatoes, seeded and chopped
8 10-inch flour tortillas, plain or flavored
Preheat oven to 350°F. Divide veggies, tomatos, and cheese among the flour tortillas. Fold in ends and roll up tortillas, then place (seam side down) on an ungreased cookie sheet. Cover with foil. Bake for 10-15 minutes, until cheese is melted. Serve with salsa or ranch dressing for dipping.
Note: Try using Monterey Jack cheese with jalapeños for a little spice! You can also sub Havarti, gouda., mozzarella, cheddar... really any kind of cheese you like!
