A traditional meal in Slovenia begins with soup, most often a delicious and simple beef soup. It could not be simpler to make, the entire preparation consisting of throwing things into one large pot. This is cooking accessible to those who haven’t the time or inclination to cook, but who want to produce something hearty and delicious. Here is the recipe, Slovenian style.
What you'll need:
- Carrots (cut into inch-long sections)
- Onions (peeled and sliced)
- Beef, any cut you like, bone-in (I recommend beef shank)
- Bay leaves
- Beef bouillon cube
- Thin noodles
Get a large pot and pour water in. Boil the water and add all of the ingredients. The amounts should be tailored to taste. Crumble in one beef bouillon cube if you like (this is the Slovene granny technique to give a bit of extra flavor).Boil for at least two hours, but the beauty of this recipe is that you can’t really boil it too long, so just throw it all together in the late morning, and let it rip at a low boil, partially covered, until you’re ready to eat lunch, or even dinner.. About ten minutes before you’re ready to serve, thrown in the thin noodles. Slovene grannies make them fresh and cut them by hand, but you can use store-bought noodles just as easily. Before you serve, remove the beef and its bone. Serve the soup in large bowls.
