July 21st is National Junk Food Day (yay, America!)
Growing up, having alcapurrias were a treat. My abuelita does not make them often, but when she does, I am packing the stuff in tupperware. Alcapurrias are ground beef filled fritters. They fried, filling, and perfect.
If you were looking for something healthy --
That healthy stuff ain't in this card.
What You'll Need:
1lb Taro or yucca root
4 packs of Sazón seasoning
2 teaspoons of salt --
Cooked Ground beef (picadillo)
2 cups oil for deep frying
How To Make It:
1) Peel yuca and green bananas and grate them in the same bowl. Add sazon and salt. Mix together. Place in food batter until smooth.
2) Cut banana leaves into rounds for shaping alcapurrias. Spread a little oil on the banana leaf. Add a tablespoon of batter atop the banana leaf round, then add a spoonful of the crab mixture and fold to shape into a torpedo shape.
3) Heat about 2 inches of oil in a large pan or deep fryer to about 370°F. Drop a few of the alcapurrias at a time into the oil and fry until well browned on one side. Flip and brown well on the second side. Remove to a paper towel-lined plate and repeat with the remaining alcapurrias.
