Recently, I shared a card about blow-pop martinis, where you garnish the art-pop colored spirits with blow-pops. Well, I am here, on National Tequila Day to share with you Tequila Pops.
Make them. Eat them. Swallow them.
Put a bunch of these out in shot glasses.
Skewer lime wedges up to where the pop meets the stick.
Silicone lollipop mould (flat or round, doesn't matter)
1/4 cup plus 1 tbsp tequila
2 tbsp cold water
3/4 cup sugar
3 tbsp golden syrup (can sub corn syrup)
dash of salt
Prepare a baking pan with a silicone mat, and a handful of lollipop sticks. Set aside. (Alt: you can use a lollipop mold).
In a medium pot, combine tequila, water, sugar, syrup, and salt.
Bring to a boil over medium heat, stirring to dissolve all the sugar and salt.
Raise temperature without stirring to just 300*F (use a candy thermometer).
Remove from heat, and quickly stir in the remaining tablespoon of tequila.
Working quickly, pour the mixture into the mould.
Insert the lollipop sticks.
Allow to cool completely before removing.
Now, what would make these even more fun would be to wrap these in frosted paper with a clear label. It's just something extra that would elevate these to spectacular!
