Empanadas are these fried treats, usually stuffed with meats, like chicken or beef. However, it's easy to make this to be stuffed with anything you want. You just need to get the basics down, and you'll be able to make any kind of empanada your tummy is grumbling for.
Alright, let's eat something green today. Because goodness knows I've been slackin' in that department...
What You'll Need:
1/2 White Onion, diced 1/2 Green Bell Pepper, diced Garlic Powder 1 Pack of Sazon 1 Tablespoon of Olive Oil
1 pack frozen dough discs (Goya sells these)
Seedless Olives (optional) Cheese of choice (optional)
Salt & pepper
How To Make It:
1) Heat stove on medium heat. Add olive oil and about 2 tablespoons of water into skillet. Add spinach, onions, bell peppers, garlic powder, salt & pepper. Cover and stir for 5 minutes.
2) Place about 2 tablespoons of the spinach mixture on one side of the empanada disc. Add cheese.
3) Fold. Close by crimping edges with a fork.
4) Add vegetable oil to a pan. Make sure it's hot, medium-high heat. Cook each side for about 3-4 minutes.
