These. Look. Incredible!!! Cooking Classy has whipped up a delightfully easy, no-bake recipe for these adorable little cheesecake bites. And (if you abide by the food holiday calendar), today is in fact National Cheesecake Day! (It really does seem like there's one of these holidays for every day of the year... oh well, might as well celebrate!) ;D
I picture these being the perfect dessert to bring to a party or potluck, because they're just so easy to make. The recipe doesn't specify exactly how long it takes to make them, but I'd venture a guess at just 20 minutes altogether!
To make your own sweet little cheesecake bites, you will need:
33 Oreo cookies
4 oz. cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1 cup heavy cream
3/4 cup milk
1 (3.4 oz) pkg cheesecake flavored instant pudding mix
30 mini Oreos
Here's what you do!
In a large mixing bowl, use an electric mixer to cream together cream cheese, powdered sugar, and vanilla. When smooth, whisk in cream, milk, and instant pudding mix. Continue to whisk until mixture is very thick, about 2-3 minutes. Place mixture in the freezer for 5 minutes.
Meanwhile, crush 3 of the Oreos (never mind the photo above!! just 3!!!) by putting them in a plastic bag and rolling over them with a rolling pin, or by using a food processor. When Oreos are finely crushed, stir them into the cheesecake mixture.
Pipe the cheesecake mixture onto the remaining 30 Oreos, and top each with a mini Oreo. Voilà – the cutest finger desserts of all time! :)
