In this post, i tell you all about my love affair with Banh Mi and why it has earned the title, ‘King of Sandwiches’! Last year, I met a bunch of Aussies in Prague, and we bonded well. They were big foodies. I remember discussing different cuisines with them, and a big part of our conversation revolved around a mutual love for Vietnamese street food, and in particular for Banh Mi (Bánh Mì in Vietnamese). Whether it was in northern Hanoi or southern Saigon (also known as Ho Chi Minh City); I remember eating Banh Mi every single day and loving it! In my opinion, Banh Mi is right up there with Pho as an essential Vietnamese food and you’d be crazy to miss it on your trip! What is Banh Mi? Banh Mi literally translates to bread, meaning a baked food containing wheat. However, this term has also become the go-to name for the famous Vietnamese sandwich, served in a French baguette with a mix of meats and vegetables. Beer Battered Fish
Continuing with food spiked with some alcohol, I never knew that you could batter your fries with beer!!! who would have known that adding beer it would make your fish crispier and take that batter to the next level of flavor? Ingredients: - 2 cups (250 grams) all-purpose flour - 1 teaspoon (4 grams) baking powder - 1 (12 ounce) (355ml) bottle of beer, any light colored beer - 1 teaspoon (8 grams) salt - 1 teaspoon (8 grams) freshly cracked black pepper - 1 teaspoon (8 grams) garlic powder - ½ teaspoon (4 grams) cayenne pepper - 1 cup (125 grams) all-purpose flour (this is for dredging) - 1½ pounds fresh cod fillets, cut into long strips (5 to 6 inches long) - canola oil for frying - lemon wedges, for drizzling at the end - malt vinegar, for drizzling at the end - fresh parsley, chopped for garnish Preparation: 1) In a large bowl whisk together the flour, baking powder, and beer until a smooth thin batter forms. If the batter is too thick add a bit more beer (or water or club soda) to thin it out. If the batter is too thin add a bit more flour to thicken it. It should be thinner than a pancake batter but slightly thicker than a crepe batter. Loosely cover with plastic wrap and let stand at room temperature for at least 30 minutes but 2 hours would be better. 2) Cut the cod fillets into (5 to 6 inch) strips. My rule of thumb is that 1 (8-ounce) fillet can feed about 2 people. Pat the fish with a paper towel to make sure it is completely dry. Season both sides with some of the salt, black pepper, garlic powder and cayenne pepper. Reserve half of the seasonings for later on. In a shallow dish, pour the 1 cup of all-purpose flour and the reserved salt, black pepper, garlic powder and cayenne pepper, whisk or stir to combine. That is your flour dredging. We do this so the beer batter can stick to the fish. 3) In a large pot, or dutch oven, heat oil to 375°. If you fill up the pot halfway with oil, that should be fine. Once the oil is hot, the fish is ready to be fried. Working with one strip at a time, dip the fish into the seasoned flour, coat evenly on both sides. Then dip the fish into the beer batter, completely dunking it until it is fully submerged. Drain excess batter and then carefully drop the battered fish into the oil. Don’t overcrowd the pot, work in batches. 4) Fry for 4 to 6 minutes on the first side. Flip it over and continue to cook for another 2 to 3 minutes on the second side. Only flip the fish once. Remove from the oil and drain on paper towels. Transfer to a cooling rack placed on top of a baking sheet. Repeat with remaining fish. To keep the fried fish warm and crispy until ready to eat, place the baking sheet in a 200°F oven. Serve warm with lemon wedges, malt vinegar and a sprinkling of chopped fresh parsley. Meatloaf Cupcakes
According to this meatloaf cupcake recipe, cupcakes don't have to be sweet. And I'm totally sold. Plus, everything is much better in miniature form and this includes meatloaf. If I have enough mashed potato leftover I will use this recipe. Makes 12 servings. For the meatloaf: 1 pound ground beef 1 pound ground pork 1 small onion, grated 1 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon black pepper 1 cup panko crumbs 2-3 splashes Worcestershire sauce 2 tablespoons minced fresh parsley 1/4 cup milk 2 eggs, lightly beaten For the sauce: 1/2 cup chili sauce 1 tablespoon dark brown sugar 1 teaspoon dry mustard For the potato “icing”: 3 cups boiled potatoes, chopped into chunks 1 egg yolk 1/4 cup half and half or heavy cream Pinch of salt 2 tablespoons melted butter Instructions: Preheat your oven to 350 F. Prepare the meatloaf by combining all ingredients together in a large bowl. Mix until incorporated. Don’t over handle the mixture or the meatloaf may be too dense. Chill while you prepare the sauce and potatoes. Make the sauce by whisking the chili sauce, brown sugar and mustard together until smooth. Set aside. While the meat is baking, whip the boiled potatoes together with the egg yolk, half and half or cream and salt until smooth. Stir in the melted butter. Fit a pastry bag with a large star tip and fill with the potato mixture. Set aside, but do not refrigerate. To assemble the cupcakes, lightly spray a cupcake tin with nonstick cooking spray. Fill each indentation with a small handful of the meat mixture, gently pressing it down until it is completely filled. Spread a teaspoon of the sauce around the top of each cupcake, and bake for about 30 minutes, until the meat is cooked through. Remove from the oven and turn on the broiler. Pipe some potato “icing” on top of each cupcake. Put the cupcakes under the broiler for a few minutes until the potatoes are lightly browned, about 2 minutes. Remove from the oven and enjoy.

Are you dreading it's only Tuesday? I'm feeling the same. I barely recovered from a bad cold and my body is lacking energy. I know that because my digestive system has been a weird lately. Which is why I'm sharing three super salads to help you (and me) power through the week! Spicy Shrimp & Avocado Salad Staring at the photo alone already brighten my appetite. This green salad is filled with vitamin and good fats. Grilled some shrimp on a pan, chop up some spinach, baby kale and cucumbers, toss in a few cubes of avocado and you're done! Lime juice is sufficient for me but if you like more flavor. The original recipe uses a miso dressing. To make the dressing simple combine 1-inch peel ginger, 3 tablespoons lime juice, 1 1/2 tablespoon white miso and 1/2 teaspoon minced garlic and 1/4 teaspoon salt. Adapted from: Pinch of Yum Fresh Spring Salad with Poached Cod Here's a nice salad to kick start your spring and to bring balance to your tummy. I know eating fish is healthy for me but I hardly eat them. I could only do two bites of raw salmon and I'm done. To get a little omega-3 in my diet poached cod doesn't sound like a horrible idea (I'm horrible with the skillet anyways). Just make sure you don't overcook it. 5-6 minutes in boiling water is sufficient! Take it out and plate it on a salad with parsley, beets, radishes, spring onions, pea shoots and parsley. For the dressing - 2 tbsp rapeseed oil or olive oil, 1/2 tbsp white balsamic vinegara, squeeze of lemon, sea salt to taste. All you need for the dressing is - 2 tablespoons vinegar, a pinch of salt and a pinch of sugar (no more than 1/8 teaspoon). Just before tossing everything together add 2 tablespoons of olive oil. Bánh giầy - One of the easiest and most popular cakes in Vietnam
Bánh giày (it can also be written as written as banh day or banh chung) is a Vietnamese traditional cake. Cake is a white, flat, and round glutinous rice cake. They are wrapped in cut pieces of banana leaves. They are usually served with a type of Vietnamese sausage. Cake can be fried to a thin crispy golden crust or be eaten with pork rolls. Another variation is called banh giay bean, where ground boiled mung bean (mung bean) - salted or sweetened - is stuffed inside. It is very similar to other Asian glutinous rice cakes like Japanese mochi, Korean tteok or Chinese lo mai chi. Do you want to hear the legend of the "Bánh giầy"? Emperor Hùng Vương had many sons. Some pursued literary careers. Others excelled in martial arts. The youngest prince named Lang Liêu, however, loved neither. Instead, he and his wife and their children chose the countryside where they farmed the land. One day, toward the end of the year, the emperor met with all his sons. He told them whoever brought him the most special and unusual food would be made the new emperor. Almost immediately, the princes left for their homes and started looking for the most delicious food to offer the emperor. Some went hunting in the forests and brought home birds and animals which they prepared into the most palatable dishes. Some others sailed out to the open sea, trying to catch fish, lobsters and other much loved sea food. Neither the rough sea nor the violent weather could stop them from looking for the best gifts to please the emperor. In his search, Lang Liêu went back to the countryside. He saw that the rice in his paddy fields was ripe and ready to be harvested, Walking by a glutinous rice field, he picked some golden grains on a long stalk. The round cake was made with glutinous rice dough and was called bánh dầy by Lang Liêu. He named the square shaped cake bánh chưng which he made with rice, green beans wrapped in leaves. Everybody was extremely happy with the new kind of cakes. On the first day of Spring, the princes took the gifts of their labor and love to the emperor. One carried a delicious dish of steamed fish and mushrooms. Another brought with him a roasted peacock and some lobsters. All the food was beautifully cooked. When it was Lang Liêu's turn to present his gifts, he carried the bánh chưng and his wife carried the bánh dầy to the emperor. Seeing Lang Liêu's simple offerings, other princes sneered at them. But after tasting all the food brought to court by his sons, the emperor decided that the first prize should be awarded to Lang Liêu. The emperor then said that his youngest son's gifts were not only the purest, but also the most meaningful because Lang Liêu had used nothing except rice which was the basic foodstuff of the people to make them. The emperor gave up the throne and make Lang Liêu the new emperor. All the other princes bowed to show respect and congratulated the new emperor.
Grilled Buffalo Shrimp Sandwiches with Spicy Avocado Ranch
Ingredients Buffalo Shrimp + Sauce - 1 pound of peeled and deveined raw shrimp - 1 teaspoon olive oil - 7 tablespoons butter, melted - 1/2 cup hot sauce - 1 teaspoon seasoned salt - Spicy Avocado Ranch - 1 large avocado, peeled and pitted - 1/2 cup greek yogurt - 2 teaspoons fresh parsley, chopped - 2 teaspoons dried dill - 1/2 teaspoon smoked paprika - 1/4 teaspoon onion powder - 1 clove garlic, minced - 1 teaspoon worcestershire sauce - 1/2 teaspoon vinegar - 2 teaspoons hot sauce (I use Franks) - pinch of salt and pepper For the Sandwiches - 1 baguette, toasted - lettuce, for layering - 4 ounces blue cheese, crumbled - buffalo sauce, for drizzling - spicy avocado ranch, for spreading Instructions 1) In mixing bowl or glass measuring cup combine the melted butter, hot sauce and seasoned salt. Whisk to combine. Place the shrimp in a medium size bowl and toss with 2 tablespoons of the buffalo sauce and the olive oil. Make sure you coat the shrimp all over. Set aside. Reserve the remaining sauce. 2) To make the spicy avocado ranch. Combine all ingredients in a food processor and blend until creamy, scraping down the sides occasionally when needed. Taste and season additionally if desired. The avocado ranch can be stored in a seal-tight container for 1-2 days. 3) Preheat the grill or grill pan over high heat. Grill shrimp about 2 minutes per side or until shrimp turn pink. Remove from the grill and toss the grilled shrimp with a few tablespoons of the remaining sauce. Don't use all the buffalo sauce, you want some to drizzle on the sandwich. Preheat the broiler with the rack in the upper third position. 4) Halve the baguette and then halve again (you should now have 4 baguettes). Place each baguette directly on the oven rack and broil until toasted and brown around the edges, 2 minutes. Remove from the oven and slice each baguette in half length wise. 5) Spread the spicy avocado ranch evenly across the bottom of each baguette. Layer on the lettuce, a sprinkle of blue cheese and a drizzle of buffalo sauce. Place the shrimp in an even layer across the bottom of the baguette. If desired drizzle with more spicy avocado ranch, buffalo sauce and another good sprinkle of blue cheese. At thins point you can throw them in the oven under the broiler to melt the cheese for about 1 minute. This is not crucial, but it is good! Place the top half of the baguette on top. And now, Enjoy!
